Ingredients
- 1 Lb. Extra lean ground turkey
- Non-Stick spray
- 1 onion chopped
- 1/2 Cup each green & red salsa
- 2 Tbsp. taco seasonings
- 1 Can black beans (low sodium)
- 1 Can corn (no salt added)
- 1 Can fire roasted diced tomatoes
- 8 Corn tortillas
- 1 Cup low fat sharp cheddar or Mexican blend cheese
- Taco toppings optional ( avocado, olives, sour cream, cilantro, etc.)
Directions
- Spray skillet with non-stick spray and heat on high
- Add onion and cook for 3-5 mins until tender
- Add turkey meat top with taco seasoning and brown 8-10 mins
- Add salsa and simmer for 2-3 mins
- Add tomatoes beans and corn and warm trough
- Place 1/2 of the tortillas on bottom of a casserole dish that’s been sprayed with pam (you may need to cut the tortillas to fit the dish)
- Pour 1/2 of meat mixture on top of tortillas and top with half the cheese
- Top with remaining tortillas and meat mixture ( don’t add cheese yet)
- Cover and cook at 400 for 30 mins
- Uncover and add remaining cheese cook for another 10 mins or until cheese is melted.
- Top with any taco toppings if desired
